Zucchini Bread

A nutrient dense way to nourish the whole family! This one is perfect toasted with avocado, lemon and sprouts


Zuchini Bread

⏱ 45 minutes | 🍴 Serves 10

Ingredients

  • 2 cups spelt flour
  • 1 cup chopped olives
  • ¾ cup chopped sundried tomatoes
  • 6 eggs
  • 1 very large zucchini grated
  • 2 Tbsp pepitas + few more to top
  • 2 Tbsp sunflower seeds + few more to top
  • 1 Tbsp baking powder

Instructions

  1. Preheat your oven to 220 degrees C and line a bread tin with either baking paper or butter
  2. Mix together everything but the flour, when that's done slowly add the flour 1/2 cup at a time
  3. Pour the mixture into the lined bread tin, top with seeds and bake at 220 degrees celcius for approx 30 minutes or until knife comes out clean
  4. Store in an airtight container in the fridge and enjoy toasted topped with your favourites!
