Zucchini Bread
A nutrient dense way to nourish the whole family! This one is perfect toasted with avocado, lemon and sprouts
Zuchini Bread
Ingredients
- 2 cups spelt flour
- 1 cup chopped olives
- ¾ cup chopped sundried tomatoes
- 6 eggs
- 1 very large zucchini grated
- 2 Tbsp pepitas + few more to top
- 2 Tbsp sunflower seeds + few more to top
- 1 Tbsp baking powder
Instructions
- Preheat your oven to 220 degrees C and line a bread tin with either baking paper or butter
- Mix together everything but the flour, when that's done slowly add the flour 1/2 cup at a time
- Pour the mixture into the lined bread tin, top with seeds and bake at 220 degrees celcius for approx 30 minutes or until knife comes out clean
- Store in an airtight container in the fridge and enjoy toasted topped with your favourites!
